LEMON NEW POTATOES
2 lbs new potatoes
2 tablespoons lemon juice
2 tablespoons butter or margarine, melted
2 tablespoons chopped parsley
1 3/4 teaspoons grated lemon rind
Wash potatoes, peel a thin strip around center. Cook potatoes, covered in boiling, salted water for 10 minutes. Add lemon jusice and cook an additional 5 to 10 minutes or until tender; drain. Combine butter, parsley and rind; spoon over hot potatoes andstir gently until coated.
Makes 6-8 servings
