RECIPE INGREDIENTS:
14 tbsp. butter, melted
2 cups sugar, divided
1/3 cup molasses
1 large egg, lightly beaten
2 1/2 cups all-purpose flour
1 1/4 tsp. ground ginger
1 tsp. cinnamon
3/4 tsp. baking soda
1/4 tsp. salt
1. Preheat the oven to 350 degrees. In a medium-sized bowl, mix the melted butter, 1 cup of the sugar and the molasses. Beat in the egg.
2. In a separate bowl, mix the flour, ginger, cinnamon, baking soda and salt. Gradually add to the butter mixture, stirring until a soft dough is formed.
3. Shape the dough into 1-inch balls, then roll each ball in the remaining sugar. Bake on an ungreased baking sheet for 10 minutes.
Makes about 5 dozen cookies.
