Makes 1 quart
Ingredients
1 ripe papaya, peeled, seeded, and sliced
1 tbsp lemon juice
3/4 cup sugar
2 eggs, beaten
1 cup milk
1 cup half & half or whipping cream
Directions
1. In blender or food processor fitted with metal blade, puree
papaya and lemon juice.
2. In a medium saucepan, combine sugar, beaten eggs and milk.
3. Cook and stir over low heat until mixture thickens and coats
a spoon.
4. Add pureed papaya and half and half.
5. Pour into ice cream canister. Freeze in ice cream maker
according to manufacturer's directions.
