1 lb. fettucini, uncooked
1/4 c. olive or vegetable oil
3 whole boneless skinless chicken breasts, in strips (18 oz.)
2 lg. red bell peppers, in strips
2 lg. yellow bell peppers, in strips
1 med. onion, cut into chunks
2 c. fresh mushrooms, sliced
1 tsp. any salt-free herb seasoning
2 tbsp. grated Parmesan cheese
Prepare fettucini; drain. In large skillet, heat oil, add chicken, peppers, onion, mushrooms and seasonings. Cook and stir over medium heat until chicken is cooked through, about 8 to 10 minutes. Add hot cooked fettucini and Parmesan cheese; toss to coat. Serve immediately. Refrigerate leftovers.
