God damn I need a Zeon Cross.
Like... way the fuck more than any fuck that has ever fucked.

So once again I worked out. That is an interesting and painful experience when you've been in a car accident and had major surgery.
I crackled like bubble wrap.

But at the moment I kinda feel better.
Lighter on my feet.

but before all that I
failed
at making custard.

I'm not ashamed to admit it!
... alright maybe just a little bit.

But I got kinda cute with it anyway. And you should really learn the basics before you improvise.

Tonight I followed 1/6th of Alton Brown's recipe...
kinda.
Instead of whipping cream, I tried half and half
instead of vanilla flavored, I splashed in some eggnog.
instead of ... actually that's about it.

There's about three points of failure that I think could have tripped me up.
Maybe 5.

The half/half instead of whipping cream.
(I couldn't help myself- the carton was already open and... I love the inuendo.)

Clear pyrex ramekens instead of ceramic
(doubt it, but I know no one that has used this stuff)

I did NOT heat the cream before adding it to the egg/sugar mixture.
(and I'm inclined to believe this was a bigger deal than anything else)

I pulled the custard too soon
(recipe said 40-45 minutes, I pulled at 42 and thought it was "too wobbly" even then)

I put a bit of bourbon caramel sauce at the bottom of the rameken
(doubt it since you make creme caramel and flan this way)

After sitting in the fridge for 2 hours I flipped the cup onto a plate gave it a tap and it made a
"poit"
sound.

... and gushed out at the edges.

It managed to set only in a ring around the top.

it was still damn good though.

as for the bourbon caramel sauce
...
put some sugar in a saucepan on medium heat
about a cup of sugar
...
put about half a shot of bourbon in the sugar.
let the sugar turn brown and gooey
...
put half a stick of butter in
let the butter melt
...
...
...
put about 1/2 a cup of half and half or heavy whipping cream in the pan
lift it off the heat and stir to incorporate if and only if necessary.
...
profit.

Its refrigerating well so far.
And
sweet christ
this stuff is awesome.

I may have failed my original undertaking.
But this sauce was a pleasant surprise.
And
there's a ton leftover.
And
I can use this an excuse to keep making custard until I get it right.
