Tuna Nicoise Wraps
You'll love this elegant and delicious no-cook entree. Armenian flatbread, or lavosh, is found in most supermarkets and makes for a tastier wrap than plain old flour tortillas, but you can use tortillas in a pinch.

Ingredients:
* 1 (6-ounce) can solid white albacore tuna in water
* 6 ounces sweet roasted peppers (preroasted)
* 6 ounces tomato (about 1 tomato)
* 4 ounces white onion
* 2 teaspoons drained capers
* 2 teaspoons minced roasted garlic (precut)
* 3/4 teaspoon anchovy paste
* 2 (9-inch) rounds Armenian flatbread
* 4 leaves romaine lettuce
Directions:
Drain the tuna. Drain the roasted peppers and cut them into large pieces. Core the tomato and cut it crosswise into 4 slices. Cut the onion into 2 slices, then cut each slice in half.
In a food processor or blender, combine the capers, roasted peppers, roasted garlic and anchovy paste and puree to a chunky consistency (about 1/2 cup).
Spread 2 tablespoons of the puree on each round of flatbread and cover with 2 lettuce leaves. Top 1 leaf on each round with 2 slices of tomato, half the tuna, 2 pieces of onion and 2 tablespoons of the remaining puree. Fold each round over the filling, cut it in half and secure closed with toothpicks.
