Arizona Casserole ((mexican Foods Yummy!!))
That's my fav foods!!!! Arizona Casserole 4 pound ground round or chuck 2 chopped large onions 2 minced garlic cloves 1/4 cup chili powder (or to taste) 6 cups tomato sauce 1 teaspoon sugar 1 1/2 tablespoons salt 2 cups sliced black olives 8 onces diced green chiles 24 corn tortillas cooking oil 4 cups small curd cottage cheese 2 eggs 1 pound thinly sliced Monterey Jack cheese 2 cups grated Cheddar cheese 1 cup chopped green onions 1 cup sour cream Brown meat in batches in a large heavy frying pan or Dutch oven. (Do not put too much meat into the perature to drop and meat will turn grey instead of brown). Saute onion and garlic with last batch of meat. Return all meatto pan. Sprinkle chili powder over meat and mix well. Add tomato sauce, sugar, salt, half the olives and the diced green chiles. Simmer over very low heat 15 minutes. While sauce cooks, fry tortillas in hot oil one at a time. Do not allow tortillas

Dad did not make it through his struggle, and went home to be with his Heavenly Father, on Saturday, June 16th, at 2:35 p.m.. He spent his Father's Day with Heavenly Father This has been a most difficult weekend, as will be the next few days, and months, trying to adjust without him in our lives. My Dad was 88. Results From Cancer Screening
ok the docs dont have the official results back but the un-official results are saying that its just mild dysplasia which is just abnormal cells in my cervix but they sent the samples up for more screening just to be sure and the doc says hopefully within 2 weeks the official results should b back but she thinks its fine and that i will b ok but due to teh face that cancer runs in my family they are keeping me on regular screening for every 6 months now instead of once every year! thank you all for keeping me in your thoughts and prayers!! Im aware Im a grown up now and I shouldnt have to explain shit to anyone, but every so often one too many people will say some insensitive shit to me or about me, and its usually directed at my weight. So to clear this shit up once and for all!!! Throughout my childhood up to the age of 19 I was a LOT thinner than I am now. Not super model thin, but I wore a size 14, nothin too horrible. I had a doctor tell me I had thyroid issues and put me on synthetic thyroid supplements or some shit, because I used to think, if a doctor gives it to me, I must NEED it, so I took them for a few months. At first there was no change. When I hit 20, I had gained almost 150 pounds due to the pills. A HUNDRED AND FIFTY!! Turned out I didnt NEED them and they totally fucked with me. Scallop And Mushroom Frittata With Newburg Sauce
FRITTATA: 2 tbsp. butter 1 tbsp. olive oil 1 1/2 lb. Cape Cod scallops 1 lg. clove garlic, finely minced 1/4 c. fresh chopped parsley 2 scallions, coarsely chopped 8 med. mushrooms, thinly sliced 6 eggs 1/4 c. whipping cream 1/4 tsp. salt 1/2 tsp. freshly ground black pepper 1/4 c. bread crumbs NEWBURG SAUCE: 5 tbsp. butter 2 1/2 tbsp. flour 1 c. milk, warmed 1 c. light cream, warmed 2 oz. sherry 1/4 tsp. paprika 1/2 c. chopped scallops (reserved from above) To make frittatas: In large skillet, heat 1 tablespoon butter and 1 tablespoons olive oil. Wash and drain scallops; pat dry, and saute until lightly browned. Remove from pan and put aside (reserve 1/2 cup for Newburg Sauce). In same skillet, add remaining tablespoon butter and saute garlic, parsley, scallions, mushrooms until tender. Remove from pan with slotted spoon. In large bowl, beat eggs, whipping cream, salt and pepper. Generously grease 2-quart casserole dish and sprinkle with bread crumbs

Rose And The Twins...
Wonderful things have happened as of July 3rd. We have babies!!! Kylee arrived first at 5:36 [US central], weighing 5 lbs 6 oz and a length of 18 inches even. Her brother Nathan arrived [breech] at 5:39 [US central], weighing 5 lbs 5 oz and at a length of 18.75 inches. Both with a heads full of hair and so Beautiful. Kylee was born with out any problems at all, however; Nathan gave us a bit of worry as he was a bit labored in his breathing [briefly]. By 8:30 pm [US central] Mother and children had been checked out thoroughly and moved to their regular room. Just catching up for a lil bit. Not been keeping my blogs up to date like I should. With such a hectic pace though what can you expect lol. Happy 4th of July everyone. We have one of the girls with us this week and we plan on going to my grandfathers for a lil cookout and then gonna try and get back here to watch the fireworks show tonight. Kinda cool we can either see the one by the mall here or the one on base lol. Either way its gonna be a nice day. Work has been just nuts. With the heat and now they are making wear long sleeves to cover my tats. I swear there are times when I could just fall over. Within in minutes of getting out of the trucks I am soaked in sweat. Thank you to all those who were so willing to help shore up my energy for my visit with Jennifer! I actually became very calm and serene before we ever arrived at the Jail, lol. It was such a blessing - I hadn't realized how much I dreaded that visit! As much as I love my daughter, and having seen her in all manner of conditions, visiting her in jail felt like the very last straw. She was most happy to see us and is really kind of comfortable with the strongest of boundaries! Her limits are set for her and they are well enforced. I recently got broken up with and i thought that it was all over for me.I swore i was going to stay depressed and never get anyone else.I have came to relize that it was one of the best things that could have happened to me.I know it is wierd to say but it is sooo true.I wanted to blame it on her an hate him but i relized it was not her fault and he helped me out. I came into this movie with mixed feelings. It's based on a true story, which usually means I get pissed at how stupid people are, and Justin Timberlake stars in it. I must say, I did get pissed at how stupid the real people were, so they had to make this movie. Alpha Dog is about some stupid white suburban kids who botch a kidnapping. Johnny is the leader, and is owed some money for drugs. He pisses off Jake, who is a psycho, and kidnaps his brother so that Jake will come up with the dough. Frankie(Justin T), is in charge of keeping Jake's 15 yr old brother occupied while he's kidnapped. I'd like to say that I would LOVE to be kidnapped by these guys. The whole time they have they guy they drink, smoke pot, and the kid loses his virginity in a 3way. I should be so lucky. Talk About A Bad Monday ...lol
The day actually started off pretty good...everything as far as getting Roo to work and such was right on schedule. I get back from dropping him off and lay down for a lil bit before I have to be at work. I go into work at 9 and by 11:15 my hiney is sitting in the emergency room ....feel free to laugh at the reason why: Because I slipped on an egg (yes, you read it right, an egg!) and felt somethings twist and others pop. So, I tell the manager right after it happened (around 1030 or so) that I may need to leave for a bit to get checked out and told her why...her response was "Aww Jesus Christ" (Forgive me for offending ...but that was her exact reaction). I stuck it out till I went on break at 11:15---I didn't tell her I was going to the ER...and she NEVER filled out the accident report. so i am going to be facing one of my biggest fears on July 25th @ 5:30PM est. I will be going to the dentist for the first time in over 5 years. The biggest reason I haven't been is because I don't have dental insurance. I still don't,however, I was referred to a good dentist by a friend that takes patients without insurance, and offers them a monthly payment plan. I can handle that. I can't however handle the lectures, that I'm sure I'm going to get when I go see him. I'm terrified. Ever since I was a little kid, I was afraid of the dentist. Only reason I'm really going now, is because I've had some really bad toothaches these past couple of days, and I need to get it taken care of. Dance, More Than The Feet
Today I had my clogging and line dancing classes and realized that I'm picking up the moves really well. I'm the youngest person in my class and in the past month I've learned 3 different dances and working on my 4th. Boot scootin is this friday, I love to go out to the corral and be known as the youngest, most people are in their middle 30's and older and just to have a good time enjoying the same things they do. 2 More Weeks
The exam went well, but they want to see me again next week for a follow up, something about having large optic nerves that puts me at a risk for glaucoma (I don't have it, just a higher chance of developing it). I'll have the glasses in 2 weeks (*drums fingers anxiously*). I went with a different set of frames than I had planned, they're a lot more rounded and looked better on me IMO. The whole process ended up costing a little less that $600 (thank the force for plastic money LOL). Back From Camping

Distractions, How Do I Know.
What a silly question that is. Subject. By the time this is finished it could be one of about ten thousand things because that is what life is filled with distractions. Well that is what I think anyway but it could be something to do with having a low boredom threshold and a short attention span as well as bad short term memory. Actually it is more to do with being a butterfly and flitting from one thing to another but at least I learn along the way. Well I had to. As this is a test blog and I have done quite a load of wittering today there is really not much to say but it was fun trying. What I do not know is the limit of this blog entry so I will type for as long as I can and then post but first copy it into word for safekeeping. That I learned the hard way have sat for hours keying in on Myspace only to have it either freeze up on me, expire or be too big. Not Gonna Be Around For A While
Hey everyone just wanted to let you know that I will not be around for a few days. I might be able to check in here and there but that will be it. For those of you who do not know my dads health has been failing he had a tumor back in April that was removed and thy type of cancer it was it traveled through the blood stream and went to his lungs. The cancer is now in his stomach liver and intestines. The nursing home has finally called in hospice for him so we are nearing the end. I am going to be spending the next few days with him. Please keep my family in your prayers this is a very hard time for us right now. Thank you all very much and I will try to keep everyone posted when i can. Missy

Well i found out that this sat there is a biggest loser audition...its not far at all and i am going to attempt to get on the show.. It's Going To Be A Nice, Long Weekend!
