Ingredients 1 large can enchilada sauce 4 chicken breasts 2 cans cream of chicken soup 1 small can sliced black olives 2 dozen corn tortillas 1 chopped onion 1 pkg. sharp cheddar cheese, grated Directions Cook chicken and shred. Mix soup, olives and onions. Cut tortillas in wedges. Layer crock pot with sauce, tortillas, soup mix, chicken and cheese all the way to top, ending with cheese on top. Pasta And Fruit Salad
This is a really refreshing summer dish and when you make it with non-fat yogurt it's quite good for you too! Ingredients 1 1/2 C. uncooked spiral pasta (plain, not tri-colored) 1 8 oz. can pineapple chunks 1 8 oz. carton peach yogurt 2 Tbs. sour cream 1 1/2 C. cantaloupe, cubed 1 C. seedless grapes, halved 1 1/2 C. fresh strawberries, sliced Directions Cook pasta according to package directions; rinse in cold water and drain. Cool completely. Drain pineapple, reserving 2 Tbs. juice; set aside. In a small bowl, combine the yogurt, sour cream and reserved pineapple juice until smooth; cover and refrigerate. In a large bowl, combine pasta, pineapple, cantaloupe and grapes. Just before serving, stir in strawberries and pour yogurt mixture over top of salad. Tip: To cut down on calories and fat, you can opt to use non-fat yogurt and sour cream. You can add your favorite fruits to this salad and make it even more colorful and tasty. Yield: 10-12 servings

Just About My Life And What I Am Doing To Change It...
I have been married for 11 years as of 7-26-07. I have 2 children. But I will start from the beginning. Cheeseburger Meatloaf
This meatloaf is extremely juicy, and the potential variety of different flavors is as big as your imagination. Try American cheese with ketchup and mustard on top and serve with dill pickle chips. Another option might be Swiss cheese and mushroom topping. Well What I plan on doing here is start a journal of my times out in the field for deer hunting. I know most of you will pass this by which is cool I just wanted to jot down some mental notes of this years season. I'm going through a very sad time. I was out taking a walk, got back with a message on my answering machine from the brother of a friend of mine. This friend moved out to California to live near his brother since they were close. Well I called the brother back and he told me my friend died on Wednesday. He was only 46. I asked what happened, the brother said he went to go see him, his tv was on and he wasn't around, but his bay window was broken. He called the police, they investigaed and found him 30 yards from the bay window. He lived in a gated community so noone really could see him from the outside. My little secret is my love affair with books. I cannot help myself... I adore them! I love their scent as well as the feel of their pages. Bookshops are one of my favorite haunts. Barnes and Nobles is wonderful, but the shops I truly adore are the ones found between a bakery and a fishing tackle shop...I am certain you have been there...you walk through the door only to find yourself surrounded by shelves containing the latest and greatest mingled amongst stacks of really ancient books... obscure ones! i am a phuck up. i make mistakes, bad choices, and the like. at times, i have beaten myself up for those mistakes. well the other day i was listening to baseball on the radio. and i had a epiphany. lol i found a way to relate something about baseball into my life. ok here is what i pondered. in baseball the greatest players ever to play the game hit short of .400 over the course of their careers. what that means is that for every 10 times they went to bat. they failed. 6 times out of 10 they couldn't get the job done. think on that for a second. more often than not, in fact more than half the time. the greatest players to play the game of baseball, our national past time, weren't successful. that gave me hope. maybe ill be successful half the time. ill keep my head up and struggle on; i am going to continue trying to do my best. i can live with that. can you?

3/4 cup butter, margarine can be used 1 cup white sugar 1/4 cup molasses 1 egg 2 cups flour 2 teaspoons baking soda 1 teaspoon cinnamon 1/2 teaspoon ground cloves 1/2 teaspoon ginger 1/4 teaspoon salt (or to taste) 1 cup raisins, washed Cream together butter and sugar and then add molasses and egg. In a separate bowl, combine the dry ingredients and then add to creamed mixture. Blend well. Stir in raisins. Roll dough into 1 inch balls and then roll in granulated white sugar. Place on ungreased cookie sheet and bake at 300 degrees for 10-12 minutes.

Why Me?
So I was going to the bank and to mail a bill. Simple errand right??? Wrong! I forgot the bill at my desk, so I put my jacket down on a cart and go to get the bill. In the 5 seconds that took, one of our intern decided he needed that particular cart for something he was doing. He moved my jacket, but I had to chase him down to get the check I was depositing. Somewhere along the line the deposit slip got lost. I had to write up another deposit slip. So now I am going to be freaking out for a while wondering what happened to the original slip. Not a big deal expect its got my address and bank account number on it! So after the bank, I stop at Starbuck's because it was right there. Why in God's name is there a line at 11:00 in the morning?!?!?! I just hope the stupid post office doesn't lose the bill I mailed, but that would just be par for today.

My Grandfather ....a Hero

Well, we have been house hunting for a while. Finally we found a place my hubby and I agree on. I want to live in a neighborhood and he wants to live as far away from civilization as possible. LOL! We looked at a house this weekend. It is gorgeous! The place has 4 bedrooms, 3 and 1/2 baths, and a fabulous kitchen and foyer! Plus, a huge yard and it is brick all over. My Trip To Gatlinburg And Funny Man Laws.
Whats up everyone. I have to say that my trip to Gatlinburg and the Great Smokey Mountains was great. While I have never been to Vegas, Pigeon Forge seemed like the Vegas Strip at night. Lots and lots of dinner shows and cool activities to get wrapped up in. Very very touristy if that is a word. I stayed near I-40 in a Days Inn, very nice, very clean although the stupid lock did not work correctly, a bit frustrating. Saturday night we all went to see the "Dolly Partin Dixie Stampeed".
